With all the delicious fruit in season our bananas haven’t been getting eaten as often which means we get to bake one of my favorite breads… Banana Bread!  I’ve tried so many different banana bread recipes over the years and have kind of mixed up my favorites into my own version.  Hope you’ll give it a try and enjoy it as much as we do.

Ingredients:

Nonstick Vegetable Oil Cooking Spray
1 1/3 Cup all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1/2 teaspoon cinnamon
3 large eggs
1 1/2 Cups sugar
2-3 mashed bananas
3/4 Cup coconut oil
1 teaspoon vanilla

Directions:

Preheat oven to 350 degrees.  Coat loaf pan with nonstick spray.
Whist flour, baking soda, salt, and cinnamon in a medium bowl.
Mix eggs, sugar, bananas, oil, and vanilla until smooth.
Add dry ingredients to banana mixture, mix until combined.
Pour batter into prepared pan and smooth the top.

Bake 60-70 minutes, let bread cool in pan for about 15 minutes.
Cut, butter and enjoy!
